Most people explain "application-specific sequencing" in buzzword jumbles. It literally can be simplified to an ice cream shop (chain). Imagine one big line (transactions). Everyone waits: buyers, taste testers, pick-up orders, etc. App-specific sequencing = a special line for specific buyers that you order. This VIP line processes first, then those customers join the main line after the pre-defined order is complete. For protocols, those buyers can be liquidators, who's transactions are organized offchain in a list, then execute onchain. AND no bots cutting in line. It's a double scoop reward for protocols.
